Baby food pancakes

Ingredients for 1 servings:

  • 100 g baby food
  • 60 g flour
  • 1 tbsp, heaped oat flakes, fine
  • 1 egg(s)
  • 1 shot of milk

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes

Leftovers and snacks for babies

Mix all the ingredients together and fry in a non-stick pan with a little or no oil to make small pancakes until golden brown. These are all approximate measurements. I was looking for a way to use up leftover baby food. I used zucchini, sweet potato, and beef puree, and used half wholemeal spelt flour. My son (10 months) really likes it, but I would add a bit of salt for my own taste. The pancakes don’t crumble easily and aren’t too sticky when eaten, so babies can eat them easily and relatively cleanly on their own. I’m sure they’ll taste good with fruit puree too, although we rarely have any leftovers.
