Winter onion ragout

Ingredients for 2 servings:

  • 400 g spring onion(s), the lower part
  • 1 tbsp rapeseed oil
  • 2 garlic cloves
  • 1 chili pepper(s), fresh
  • 100 g tomatoes, chopped
  • ½ tsp thyme
  • 1 tbsp balsamic vinegar
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

vegan, slightly spicy

Cut the cleaned lower stems of the spring onions into approximately 1 cm thick rings. Slice the chili pepper into thin rings. Add the amount to your taste. Heat the oil in a pan, sauté the chopped garlic and chili rings. Add the tomatoes, season with salt, pepper, and thyme, and let it reduce slightly. Add the onion rings and simmer gently over low heat for about 15-18 minutes. Stir in the balsamic vinegar. Season to taste and thicken with a little cornstarch, if desired. Serve with baked potatoes, boiled potatoes, rice, baguette, flatbread, etc.
