Ingredients for 1 servings:
- 500 g sweet potato(s), red
- 5 leaves of red cabbage
- 2 m.-large onion(s), red, chopped
- 2 chili peppers, red, sliced
- 5 sprigs coriander with roots, fresh
- 5 cm ginger
- 1 liter vegetable broth, instant
- 1 tsp balsamic vinegar, dark
- pepper
- 2 tbsp oil

Sweet potato, cabbage, and coriander soup with ginger
Finely dice the onions, ginger, coriander roots, and chili. Wash the sweet potato thoroughly, but do not peel it and dice it. First, remove the stalks from the red cabbage leaves and cut them into fine strips. Heat the oil in a deep saucepan. Sauté the onions, ginger, and coriander root. Add the red cabbage and sauté for 5 minutes. Add the potatoes and chili and pour over the broth. Bring to a boil and simmer for about 30 minutes. Purée the soup and season with pepper and balsamic vinegar. Sprinkle with the coriander leaves before serving.
