Green potato soup

Ingredients for 4 servings:

  • 1 kg potatoes
  • 750 g beans, green
  • 6 tbsp olive oil
  • 3 tsp cumin
  • 4 tsp black cumin
  • 4 tsp coriander
  • 1 bunch of coriander leaves
  • 1 bunch of mint
  • 1 lemon(s)
  • 2 chili peppers
  • n. B. water
  • Salt

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

vegan, with green beans

Cook the potatoes and green beans separately. Peel the potatoes and mash or puree them with water. Set aside 4 mint leaves. Puree the olive oil, chilies, cumin, nigella, coriander seeds and leaves with the mint and a little water, or grind them very finely in a mortar and pestle. Stir the spice mixture into the potato soup. Add the green beans to the soup, season with salt and lemon juice, and garnish with the mint leaves. It also tastes delicious cold.
