Ingredients for 2 servings:
- 2 large carrots
- 80 g oat flakes
- 200 ml plant milk (plant drink) (rice/oat/almond drink)
- 100 ml water
- 1 tbsp gingerbread spice
- 2 tbsp erythritol (sugar substitute)
- 4 tbsp coconut yogurt (yogurt alternative)
- Desiccated coconut, nuts, fruit etc. as topping

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes
quick winter porridge with juicy carrots
Wash the carrots and grate them in a food processor or with a grater. Bring the water with the plant-based drink to a simmer and cook the carrots and oats for 10 minutes until a porridge-like mixture forms. Stir in the gingerbread spice and erythritol (honey or agave syrup can also be used). Ladle the porridge into a bowl and serve with coconut yogurt and the topping.
