Vegan carrot porridge

Ingredients for 2 servings:

  • 2 large carrots
  • 80 g oat flakes
  • 200 ml plant milk (plant drink) (rice/oat/almond drink)
  • 100 ml water
  • 1 tbsp gingerbread spice
  • 2 tbsp erythritol (sugar substitute)
  • 4 tbsp coconut yogurt (yogurt alternative)
  • Desiccated coconut, nuts, fruit etc. as topping

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

quick winter porridge with juicy carrots

Wash the carrots and grate them in a food processor or with a grater. Bring the water with the plant-based drink to a simmer and cook the carrots and oats for 10 minutes until a porridge-like mixture forms. Stir in the gingerbread spice and erythritol (honey or agave syrup can also be used). Ladle the porridge into a bowl and serve with coconut yogurt and the topping.
