Ingredients for 4 servings:

  • 4 pink grapefruits
  • 2 avocados
  • 1 oak leaf lettuce
  • 4 tomatoes
  • 3 lemons, juice
  • 3 tbsp honey
  • 6 tbsp olive oil
  • Sea salt and pepper
  • ½ bunch parsley

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel and segment the grapefruit. Halve the avocados, remove the pits, scoop out the flesh from the skin with a tablespoon, and cut into cubes. Wash and trim the oak leaf lettuce, spin dry, and chop. Score the tomato stems crosswise, blanch in boiling water, rinse, and peel. Then remove the seeds and dice the flesh. Mix with the grapefruit segments, avocado cubes, and oak leaf lettuce. Mix the lemon juice, honey, olive oil, salt, and pepper to make a dressing and drizzle over the salad. Wash the parsley, shake dry, chop, and sprinkle over the salad.
