Breakfast muffin with egg

Ingredients for 4 servings:

  • 4 eggs
  • 1 shot of milk
  • 4 slices of ham
  • 1 bell pepper(s), diced
  • olive oil
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Preheat the oven to 200°C. Grease 4 muffin tins with a little olive oil and line each with a slice of ham. Whisk the eggs with the milk, add the diced bell pepper, and season with salt and pepper. Divide the egg mixture among the muffin tins and bake in the oven for about 10 minutes. It can dry out very quickly, so check it frequently!
