Sweet potato gratin

Ingredients for 5 servings:

  • 800 g sweet potatoes
  • 2 cups of cream, 200 g each
  • salt and pepper
  • some thyme, dried
  • some rosemary, dried
  • 120g Gouda

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes

Peel the sweet potatoes and slice them into approximately 2 mm thick slices. Quarter the potatoes, which will fit most food processors. Place half of the sweet potato slices in a baking dish and season with salt, pepper, rosemary, and thyme. Then distribute the remaining sweet potato slices in the baking dish. Season again with salt, pepper, rosemary, and thyme. Pour the cream over the potatoes and sprinkle with the grated cheese. Bake in an oven preheated to 180°C (top/bottom heat) for approximately 40-45 minutes on the middle rack.
