Ingredients for 2 servings:
- 350 g potatoes, peeled and weighed
- 250 g broccoli, cleaned and weighed
- 1 onion(s), approx. 150 g
- 2 tbsp butter
- Salt and pepper, black
- nutmeg
- Milk
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
Dice the potatoes. Divide the broccoli into small florets and dice the stalks. Peel the onion, halve it, and slice it into rings. Place the potatoes in a pot of salted water, cover, bring to a boil, and simmer for 10 minutes. Heat 1 tablespoon of butter in a pan, add the onion rings, and fry gently until browned. Season with salt and pepper. After the potatoes have cooked for 10 minutes, add the broccoli. Bring back to a boil and simmer for another 10 minutes. Drain the vegetable water and return the pot to the stove; let the steam evaporate briefly. Mash the potatoes and broccoli with a potato masher. Stir in 1 tablespoon of butter and enough milk until the mash reaches the desired consistency. Season the mash with salt, black pepper, and nutmeg. Serve the potato and broccoli mash sprinkled with the roasted onion rings.
