Ingredients for 4 servings:
- 600 g pasta (macaroni)
- 4 eggs
- 12 tbsp vinegar
- 12 tbsp oil
- 12 tbsp milk
- Salt

Macaroni with sour egg sauce
Cook the macaroni in salted water according to the package instructions. Meanwhile, in a metal bowl, whisk the eggs with vinegar, milk, and oil, and season well with salt. About 4-5 minutes before the pasta is ready, pour the egg mixture in the metal bowl onto the pasta (this saves you having to use another pan of water) and whisk continuously until the “sour zabaglione” becomes lighter in color and takes on a firmer, creamier consistency. Caution! Don’t let it set! The egg mixture will curdle a little around the edges because it’s already very hot, but most of it should be creamy! Finally, toss with the drained pasta. Tastes wonderful as a main course (something different from pasta with tomato sauce) or as a succulent side dish to grilled meats or roast pork.
