Breakfast almond protein rolls

Ingredients for 1 servings:

  • 200 g almonds, ground, blanched
  • 200 g low-fat curd cheese
  • 100 g yogurt
  • 5 eggs
  • 1 tsp salt
  • 1 packet of baking powder
  • 50 g soy flour
  • 1 tbsp locust bean gum
  • 50 ml almond milk (almond drink)
  • 2 tbsp coconut blossom sugar
  • ½ tsp vanilla, ground

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 55 minutes

without flour, low carb

Preheat the oven to 150°C. Combine all dry ingredients in a mixing bowl, beat in the eggs with a whisk, and add enough almond milk to form a batter that drips easily from a spoon. Divide the batter among 12 muffin cups and bake for 45 minutes. Serve with jam or nut butter, just like with rolls.
