Ingredients for 3 servings:
- 1 celeriac
- olive oil
- Salt

Working time approx. 10 minutes; Cooking/baking time approx. 2 hours 30 minutes; Total time approx. 2 hours 40 minutes
whole tuber baked in one piece, simple, vegetarian, low in calories
Separate the celery root from the leaves, if present. Remove any parts of the root you don’t want to eat. Leave the skin on. Then wash the root thoroughly, brush it off, and dry it. Rub the root all over with olive oil and season generously with salt. Place the root on baking paper on a baking tray and bake at 175°C for 2 1/2 hours. The celery will be aromatic and dark brown on the outside and tender on the inside. Simply place it in a ball on a plate and cut out pieces like slices of cake. You could serve it with potatoes. We like to eat it hot with fresh white bread, butter, and cheese. One large root, as you usually get, is enough for two people with a great appetite. But that’s a lot given the intense flavor. If the root is too much for two people, I think it’s a good idea to simply cut off a slice for the next soup.
