Vegetarian breakfast sandwiches

Ingredients for 2 servings:

  • 100 g tomatoes
  • 4 leaves of lettuce or romaine lettuce
  • 2 eggs
  • 4 large slices of toast
  • some tomato ketchup
  • mayonnaise
  • Mustard
  • some salt and pepper (or smoked salt)

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 18 minutes

Simple and fast

Toast the bread, wash the lettuce, and slice the tomatoes about 3 mm thick. Fry the eggs until fried. Spread all the slices of bread with ketchup and top with a lettuce leaf. Top two of the slices with the fried eggs and tomatoes. Drizzle the tomatoes with mustard and mayonnaise. Season the bread with salt and pepper and top with the remaining slices of bread. Cut each sandwich diagonally and serve.
