Gnocchi casserole with green beans

Ingredients for 2 servings:

  • 1 garlic clove(s)
  • 100 g spinach, frozen
  • Salt and pepper, freshly ground
  • 1 tbsp olive oil
  • 100 g green beans
  • 1 pack of gnocchi (400 g, refrigerated)
  • 200 g tomato sauce with basil, ready
  • 1 tomato(s)
  • 1 tbsp hard cheese, Italian, grated
  • 1 tbsp pumpkin seeds

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes

Preheat the oven to 200°C (top/bottom heat), 180°C (fan oven), gas mark 4. Peel and finely dice the garlic clove. Finely chop the frozen spinach, let it thaw, and season with salt, pepper, the garlic clove, and oil. Place the spinach in a casserole dish. Trim, rinse, and chop the green beans. Cook in salted water for about 7 minutes. Add the gnocchi for the last 2 minutes of cooking and let it cook. Drain and toss with the tomato sauce. Place the beans and gnocchi on top of the seasoned spinach in the dish and spread out. Rinse, trim, and slice the tomato. Arrange the tomato slices, cheese, and pumpkin seeds on top of the gnocchi. Bake in the preheated oven for about 15 minutes until golden brown.
