Toblerone mousse with marinated oranges

Ingredients for 6 servings:

  • 100 g chocolate (Toblerone)
  • 100 g dark chocolate
  • 330 ml pastry cream (alternatively regular whipped cream)
  • 3 oranges
  • 1 tbsp lemon juice
  • 1 tbsp honey, liquid
  • 1 tsp cocoa powder, unsweetened, dark

Instructions

Working time approx. 30 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 30 minutes

Anne’s vegetarian Christmas menu – Dessert

1. Roughly chop both chocolates. 2. Melt the chocolate with 4 tablespoons of cream in a bowl over a hot water bath. Then let it cool to lukewarm, stirring occasionally. 3. Whip the remaining cream until stiff peaks form. Fold into the chocolate in three portions using a spatula. 4. Pour into a bowl or baking dish, cover, and chill for 2-3 hours. 5. Peel the oranges so that all the white pith is removed. Cut out the segments between the membranes, reserving the juice. 6. Mix 8 tablespoons of orange juice with the lemon juice and honey. Carefully mix in the orange segments. 7. Use a tablespoon to scoop out dumplings from the mousse. Dust with cocoa powder and serve with oranges.
