Ingredients for 4 servings:
- 4 apples, e.g. Boscoop (winter apples)
- 100 g oat flakes, fine
- 6 tbsp coconut oil
- 10 g almonds, chopped
- 10 g walnuts, chopped
- 15 g hazelnuts, chopped, roasted
- 2 tbsp almond butter, white
- ½ tsp cinnamon powder
- 2 pinches of Bourbon vanilla powder
- 50 g marzipan paste
- 50 ml water
- 100 g whipped cream, vegan
- 50 g biscuits, vegan, crumbled or lightly sweetened muesli
- 250 g soy yogurt (yogurt alternative) (vanilla flavor)
- 1 tbsp vanilla pudding powder
- 1 tbsp vegan cream cheese (optional)

Preheat the oven to 180 degrees Celsius (convection oven). Mix the vanilla soy yogurt with the pudding mix and the cream cheese (optional). Soften the marzipan and water in a saucepan until creamy. Melt the coconut oil in the microwave. Pour the oats into a medium-sized bowl. Then add the melted coconut oil, the marzipan cream, half of the vanilla cream, the nuts, the nut butter, and the cinnamon, and mix well. Cut off the tops of the apples and set aside. Hollow out the apples with a teaspoon and fill them with the mixture. Pour a little water into a baking dish, place the filled apples and the apple tops skin-side down, and bake in the oven for 20-30 minutes. Meanwhile, whip the whipped cream. Remove the cooked apples from the oven. Top the apples with the vanilla sauce and a little almond butter. Garnish with crushed biscuits or ready-made sweetened muesli or chopped nuts. Place a dollop of whipped cream next to it.
