Crispy banana, parsley and garlic balls

Ingredients for 4 servings:

  • 2 bananas, ripe
  • 2 garlic cloves
  • e.g. parsley
  • 150 g breadcrumbs
  • e.g. salt and pepper
  • Oil for frying

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 20 minutes

Peel the bananas and mash them in a bowl with a fork until smooth. Peel and finely chop the garlic cloves. Wash, dry, and finely chop the parsley. Add the chopped garlic and parsley to the mashed bananas. Add the breadcrumbs and mix everything into a workable dough. Season with salt and pepper. Form the mixture into small balls. If the mixture is too wet, add more breadcrumbs. Heat the oil in a pan and fry the balls over medium heat until golden brown on all sides, about 5-7 minutes. Drain the balls on kitchen paper and serve warm. Tip: A yogurt dip or a light tomato sauce goes perfectly with them!
