Soy and chickpea stir-fry

Ingredients for 2 servings:

  • 125 g soy strips
  • ½ onion(s)
  • 1 garlic clove(s)
  • 20 ml soy sauce
  • 1 tsp herbs de Provence
  • ½ tsp paprika powder
  • 5 tbsp olive oil
  • 200 g chickpeas, from the jar
  • 250 ml tomato sauce
  • 1 tbsp salsa, spicy
  • e.g. nutmeg, freshly grated
  • e.g. salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

First, soak the soy strips in twice the amount of water for about 15 minutes. In the meantime, finely dice the onion and garlic. Drain the excess water from the soy strips and add the soy sauce, Provençal herbs, and paprika, and mix well. Then, sauté the diced onions and garlic cloves in olive oil. Once they’re slightly browned, add the soy strips and sauté briefly. Then add the chickpeas, tomato sauce, and salsa. Season to taste with nutmeg, pepper, and salt. Serve with baguette or flatbread.
