Ingredients for 3 servings:

  • 1 ½ zucchini
  • 2 avocados
  • 4 tomatoes
  • 200 g feta cheese
  • salt and pepper
  • Olive oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 7 minutes; Total time approx. 17 minutes

Cut the zucchini and tomatoes into thin slices. Halve the avocado, remove the pit, and scoop out the flesh from the skin with a spoon. Heat olive oil in a pan. Fry the avocado flesh until it begins to melt. Add the zucchini and tomatoes and fry until crisp. Season to taste. Finally, fold in the feta cheese, which has been cut into chunks. Your delicious vegetarian dish is ready! If you like, sprinkle with grated hard cheese.
