Feta cheese on a bed of vegetables from the microwave

Ingredients for 2 servings:

  • 100 g feta cheese
  • 1 pointed pepper
  • 1 small beefsteak tomato(s)
  • ½ bunch of spring onions
  • 2 garlic cloves
  • 8 olives, black
  • ½ pepper
  • 2 tbsp rosemary, chopped
  • 1 cl olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Rest time approx. 5 minutes; Cooking/baking time approx. 6 minutes; Total time approx. 26 minutes

Halve the bell pepper, remove the seeds, and cut into strips approximately 5 mm wide. Remove the stem from the tomato, halve the tomato, and slice thinly. Peel the garlic and finely slice. Clean and chop the spring onions, about 1 cm long. Roughly chop the peppers and olives. Place half of the vegetables, except the peppers and olives, in a microwave-safe dish and sprinkle half of the herbs over them. Cut the feta into four strips, place on top, then add the peppers, the olives to the rest of the vegetables, and spread over the cheese. Season with salt and pepper, sprinkle with herbs, and finally drizzle with olive oil. Cover the dish and microwave for 6 minutes at 600 watts, to allow the vegetables to retain their crispness. Let stand for at least another 5 minutes to marinate. Served with fresh white bread as a starter for two people, or as a light summer dish for one person.
