Strawberry-vanilla pudding

Ingredients for 2 servings:

  • 500 ml milk
  • 380 g strawberries, fresh or frozen
  • 1 vanilla pod(s)
  • 40 g cornstarch
  • 1 tbsp sugar

Instructions

Working time approx. 20 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 5 minutes; Total time approx. 3 hours 25 minutes

Wash fresh strawberries and remove any green tops. Thaw frozen berries. Finely puree the strawberries. Scrape out the seeds from the vanilla pod and add them to the strawberries. Mix the cornstarch with the sugar and stir in 6 or 7 tablespoons of milk until smooth. Pour the milk into a saucepan, add the strawberries, and stir in. Bring to a boil while stirring. If you like, you can add the vanilla pods for a more intense flavor. Remove them just before the water boils. Once it boils, stir in the mixed cornstarch and bring back to a boil briefly. Then pour into dessert bowls or a bowl and let cool in the refrigerator.
