Ingredients for 2 servings:

  • 4 slice(s) ham, air-dried; more if needed
  • 200 g chopped chicken
  • 2 spring onions
  • 1 clove(s) garlic
  • 40 g Parmesan, freshly grated
  • 30 g breadcrumbs
  • 1 small egg(s)
  • Parsley, finely chopped
  • salt and pepper
  • nutmeg
  • olive oil

Slice the spring onions into thin rings; finely dice the garlic clove. Lightly beat the egg. Mix the minced chicken, spring onions, garlic, egg, Parmesan cheese, breadcrumbs, parsley, salt, pepper, and nutmeg into a meat dough and let it rest in a cool place for about 30 minutes. Halve the ham slices, spread them out on a work surface, place a dollop of the meat mixture in the center of each half ham slice, shape them into a roll, and wrap the ham around them. If the ham slices are relatively small, the mixture will make more than 8 rolls, so have a little more ham on hand. Place seam-side down in a perforated cooking container and steam as follows: 15 min – 90% humidity – 100°C 5 min – 30% humidity – 180°C, or a little longer if necessary, until nicely browned. Serve with tomato sauce. The rolls are enough for two people as a main course or they make 8 portions as a warm starter or intermediate course as part of a meal.
