Ingredients for 4 servings:
- 2 large eggs
- 20 g ghee
- 15 g chocolate with 99% cocoa content
- e.g. xylitol (sugar substitute)

Preheat oven to 160°C (top/bottom heat). Separate the eggs and beat the egg whites until stiff peaks form. Beat the egg yolks with xylitol (if desired) (I use up to 10g) until frothy and gently fold into the egg white mixture. Meanwhile, melt the ghee and 10g of chocolate in a small, non-stick pan and mix. Grate the remaining 5g of chocolate. Carefully fold the melted chocolate mixture into the egg whites, then add the chocolate shavings. Place four piles on a baking sheet lined with baking paper. Bake in the oven for about 10 minutes, until firm but not too brown. This chocolatey version of little Oopsies is served with coffee with milk foam or almond milk foam, as they’re perfect for dipping into the foam.
