One Pot Pasta Tomato Mozzarella

Ingredients for 2 servings:

  • 260 g pasta
  • 200 g vine tomatoes
  • 1 small onion(s)
  • 1 clove(s) garlic
  • some olive oil
  • 1 handful of basil leaves, fresh
  • ½ chili pepper(s) (more or less as desired)
  • 1 tbsp tomato paste
  • 600 ml vegetable stock
  • 1 ball of mozzarella
  • possibly herbs, Italian, if required

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

simple, quick, without much washing up

First, peel and chop the onion and garlic, then sauté them in a little olive oil until translucent. Then add the tomato paste and tomatoes and sauté briefly. Now add the remaining ingredients, except for the mozzarella, and let cook for about 10 to 15 minutes. Once the liquid is no longer visible, add the mozzarella. Heat over low heat and stir until melted. Season with Italian herbs, if desired. Serve immediately.
