Fried Brussels sprouts and sweet potato

Ingredients for 1 servings:

  • 100 g sweet potato(s), peeled and weighed
  • 100 g Brussels sprouts, cleaned and ready to eat
  • 15 ml extra virgin olive oil
  • some salt and pepper, freshly ground

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

A delicious quick vegetable side dish

Peel the sweet potato. Weigh out 100g and cut into approximately 1-1.5cm thick slices. Quarter or halve larger slices. Remove any bad leaves from the Brussels sprouts and trim the stems slightly. Weigh out 100g. Cut each sprout into 3 slices. Heat olive oil in a pan, not too hot. Fry the sweet potato and sprout slices over medium heat until lightly browned. Turn occasionally. Season with salt and pepper. I had tzatziki as a side dish.
