Basil soup with topping

Ingredients for 4 servings:

  • 1 onion(s)
  • 2 garlic cloves
  • 4 tbsp olive oil
  • 750 ml vegetable stock
  • 200 ml whipped cream
  • 2 bunch basil, picked leaves
  • salt and pepper
  • 1 small cucumber(s), diced

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Peel and finely chop the onion and garlic, and fry in hot oil until translucent. Deglaze with broth and cream, simmer for a few minutes, and season with salt and pepper. Add the basil, purée the soup, and serve with diced cucumber as a topping.
