Ingredients for 4 servings:
- 400 g celery
- 200 g pear(s)
- 200 g apple
- 1 onion(s)
- 600 g water
- 1 tsp, heaped spice paste for vegetable broth (alternatively granulated broth)
- 100 ml white wine
- 200 ml cream
- salt and pepper
- nutmeg
- Oil for frying

Peel the celery, pear, and apple and cut into small cubes or grate them in a food processor. Finely chop the onion or cut into very small pieces. Sauté all ingredients in oil in a saucepan. Deglaze with the water and wine and add the spice paste or granulated stock. Bring to a boil, then simmer over medium heat with the lid closed for about 20 minutes, depending on the size of the chopped pieces. Once cooked, blend briefly, then add the cream, season with salt, pepper, and nutmeg, and bring back to a boil. Finally, blend until foamy.
