Avocado toast with chickpeas and sprouts

Ingredients for 2 servings:

  • 4 slices of multigrain bread
  • 2 avocados
  • 1 handful of sprouts or cress
  • 1 dash of lemon juice
  • salt and pepper
  • 1 can chickpeas
  • 2 tsp paprika powder, smoked
  • 1 tsp cumin powder
  • ¼ tsp cayenne pepper
  • Salt

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Rinse and drain the chickpeas, then fry them in a pan with 3 tablespoons of oil until browned all over and slightly crispy. Stir in the spices and transfer the chickpeas to a bowl to prevent the spices from burning and becoming bitter. Blend the avocados in a blender with salt, pepper, and a dash of lemon juice. Toast the slices of bread in the toaster and spread with the avocado cream. Arrange the chickpeas on top and garnish with the sprouts. Tip: For an even more flavorful twist, drizzle the bread with chili or sweet chili sauce.
