Ingredients for 2 servings:
- 6 toasties
- 1 avocado(s)
- 125 g smoked tofu
- some Kala Namak
- some spice mix for avocado or salt and pepper
- 1 dashes lemon juice
- some hummus
- n. B. Cheese substitute, e.g. from Simply V
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 15 minutes
Bake the toasties. Since we don’t have a toaster, I bake them in a pan for a few minutes on each side. This works just as well. In the meantime, cut the smoked tofu into really thin slices and heat a little oil in a pan. Fry the tofu until crispy on both sides and let it cool slightly. This will give it a bit more crunch and a taste similar to bacon. Spread half of the toasties with avocado and the other half with hummus. Sprinkle a little Kala Namak salt on the hummus; it gives it a wonderful eggy flavor. Just don’t use too much salt, as the flavor is very strong! Sprinkle the avocados with an avocado topping from “Just Spices.” Salt, pepper, and a squeeze of lemon juice are also excellent for seasoning. Place a few crispy slices of tofu on the avocado side of the toasties. Top with a slice of cheese substitute, if desired, and place the hummus-spread lid on top. The two of us eat about three of these toasties in the morning and feel quite full afterward. The amount can, of course, be adjusted to your needs. We prefer hummus with chili or olives.
