Tomato – mozzarella – omelet

Ingredients for 2 servings:

  • 4 m.-sized eggs
  • 2 tomatoes
  • 50 ml cream
  • 1 mozzarella
  • salt and pepper
  • 50 g margarine

Instructions

Working time approx. 10 minutes; Total time approx. 10 minutes

Wash the tomatoes, halve them, and remove the stems. Cut the tomatoes into small pieces, season with salt and pepper. Slice the mozzarella. Whisk the eggs with the cream and season with salt and pepper. Heat the margarine in a heatproof pan, add the eggs, and let them set briefly. Distribute the tomatoes on top and place the mozzarella slices on top. Bake in the oven at 180°C for about 15 minutes.
