Banana bread with green pepper

Ingredients for 1 servings:

  • 500 g flour
  • 2 tsp salt
  • 1 tsp sugar
  • ½ pack of yeast, fresh
  • ¼ liter milk, lukewarm
  • 50 g butter
  • 3 bananas
  • ½ lemon(s), juice
  • ½ tbsp peppercorns, green (pickled in vinegar)
  • 4 tbsp parsley, chopped

Instructions

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Dissolve the yeast in 3 tablespoons of lukewarm water and knead it with flour, salt, sugar, milk, and butter to form a dough. Let the dough rise for about 1.5 hours, until it has doubled in size. Then roll it out on a floured surface to about 30 x 40 cm. Top with banana slices and peppercorns, sprinkle with parsley, and drizzle with lemon juice. Then roll the dough up like a Swiss roll and pinch the ends together. Bake at 200 degrees Celsius (top and bottom heat) for about 45 minutes until golden brown. The bread tastes best fresh from the oven with herb quark or cream cheese.
