Simple carrot soup

Ingredients for 3 servings:

  • 500 g carrot(s)
  • 1 onion(s)
  • 1 liter vegetable broth
  • 1 tbsp butter
  • Vinegar
  • Sugar
  • Salt
  • Parsley

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes

Finely chop the onion and caramelize it in a little butter and sugar until the cubes are light brown. Peel and finely chop the carrots, and add them. Then add the vegetable stock and cook the carrots until soft. Purée the soup until smooth. Season generously with salt and vinegar. Serve sprinkled with freshly chopped parsley, if desired.
