Millet with sauerkraut

Ingredients for 2 servings:

  • 100 g millet
  • 1 carrot(s)
  • 100 g sauerkraut
  • 1 onion(s)
  • some oil for frying
  • 1 bay leaf
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel and finely chop the onion. Trim and grate the carrot. Heat a little oil in a small cast iron pot or skillet and fry the vegetables until golden brown. Wash the millet in lukewarm water (washing removes tannins). Add the millet to the vegetables and mix. Add a bay leaf. Season with salt and pepper, pour over 250 ml of boiling water, and simmer at low heat for 25 minutes.
