Spaghetti with zucchini sauce

Ingredients for 2 servings:

  • 300g spaghetti
  • 1 onion(s)
  • 2 garlic cloves
  • 500 g zucchini
  • 4 tbsp oil
  • ½ pack of herbs (8-herb mix), frozen
  • 125 ml cream
  • salt and pepper
  • 1 tomato(s)
  • possibly balsamic vinegar
  • Water (salt water)

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Can also be used as a salad – simply delicious!

Cook the spaghetti in salted water according to the instructions until al dente. Finely chop the onion(s) and garlic. Slice or grate the zucchini. Sauté the onions, garlic, and zucchini in hot oil for about 3 minutes. Add the herbs and cream. Season with salt and pepper, and season to taste. Peel and dice the tomato, and sauté briefly. Serve with the spaghetti on deep plates and garnish with the herbs, if desired! Salad variation: Simply add (balsamic) vinegar to taste and season again! This makes a simple zucchini spaghetti salad that’s a hit!
