Ingredients for 2 servings:
- 1 cup almond milk (almond drink) or coconut milk
- 2 cups water
- 1 cup amaranth
- ½ tsp salt
- 2 tbsp almond butter
- 2 tbsp Greek yogurt, 0.2% fat
- 1 tbsp honey
- ½ nectarine(s)

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Bring the milk and water to a boil in a saucepan. Stir in the amaranth and reduce the heat to low. Add salt and simmer for about 20 minutes. Once the amaranth is cooked, divide the contents of the pan between two bowls. Add 1 tablespoon of butter, 1 tablespoon of Greek yogurt, 1 tablespoon of honey, and 1/2 a nectarine to each bowl and mix well.
