Vegan pudding oats with fresh fruit

Ingredients for 1 servings:

  • 250 ml plant milk (plant drink)
  • 25 g oat flakes, fine
  • 20 g cornstarch
  • ½ tsp vanilla
  • 30 g xylitol (sugar substitute)
  • 150 g soy quark (quark alternative)
  • 100 g fresh fruit, e.g. strawberries, raspberries, bananas

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 15 minutes; Total time approx. 1 hour 25 minutes

Heat most of the soy milk with the Xucker in a saucepan until boiling. Add the oats and let them swell for a few minutes, stirring occasionally. Meanwhile, mix the cornstarch with the remaining soy milk until smooth and add to the pan while stirring. Simmer the mixture while stirring. Remove the pan from the heat and let it cool slightly. Wash, trim, and slice the fruit. Fold the soy curd into the pudding oats mixture, transfer to a bowl, top with the fruit, and chill in the refrigerator. Once the pudding oats have cooled completely, they are ready to enjoy.
