Ingredients for 2 servings:
- 300 g minced meat, half and half
- 1 onion(s)
- 175 g corn
- 100 g cheese, grated
- 50 g tomato paste
- 30 g mustard, medium hot
- 3 red bell peppers
- olive oil
- Spice mix (bruschetta)
- oregano
- pepper
- Salt
Instructions
Working time approx. 25 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 1 hour 5 minutes
Brown the ground beef in olive oil, then add the onions and cook a little longer until the onions are translucent. Remove the cooked ground beef from the heat, add the corn, and stir well. Add the mustard and tomato paste and season to taste. Stuff the deseeded pepper halves with the ground beef mixture and sprinkle with cheese. Place the pepper halves in an oven preheated to 175°C (350°F) and bake for about 20-25 minutes, until the cheese is golden brown.
