Ingredients for 3 servings:
- 3 zucchinis
- 500 g minced meat
- 1 bell pepper(s), red
- 1 large onion(s)
- 2 balls of mozzarella
- 1 tsp green pesto
- 1 tbsp tomato paste
- Salt
- pepper
- marjoram
- Herbs, Italian
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 20 minutes
Wash and halve the zucchini. Scoop out the flesh, leaving a 7 cm thick edge. Season the raw minced meat with salt, pepper, and herbs. Sauté the onions and fold into the mixture. Add the pesto, tomato paste, and finely diced bell peppers, and mix well. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Stuff the zucchini, place in a suitable baking dish, and bake on the middle rack. Pour the resulting broth over the zucchini every 10 minutes. After 20 minutes, reduce the heat slightly and bake the vegetables for another 40 minutes. Then scatter the mozzarella over the top and wait until it has melted. Serve with rice.
