Lettuce with mandarin dressing and almond flakes

Ingredients for 2 servings:

  • ½ lettuce(s)
  • 2 tangerines
  • 4 tbsp rapeseed oil
  • 30 g almond flakes
  • Salt and pepper, white

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 2 minutes; Total time approx. 17 minutes

Roast the flaked almonds in a pan without fat. Wash the lettuce, cut into small pieces, and arrange on plates. Peel one mandarin orange, remove the white pith from the segments, and arrange them on the lettuce. If desired, you can also fillet the mandarin orange. For the dressing, cut open the second mandarin orange and squeeze the juice. Combine the mandarin juice, rapeseed oil, salt, and white pepper in a bowl and mix well. Pour the dressing over the salad. Finally, scatter the toasted flaked almonds on top of the salad.
