quick pancake with only 2 ingredients
Mash the ripe banana in a deep dish with a fork until it forms a paste. The riper the banana, the easier it is to mash. It will also be sweeter. Then add the eggs and mix everything well into a batter. If desired, you can also stir in a little baking powder; this will help the pancakes rise more and look more like pancakes, and add a little flavoring. I like it best with a little vanilla flavoring, but that’s a matter of taste. Finally, fry the batter in a pan on both sides, and you have super simple, delicious pancakes.
