Asian Pak Choi One Pot Pasta

Ingredients for 5 servings:

  • 1 pak choi
  • 5 m.-sized carrot(s)
  • 2 m.-large tomato(s)
  • 2 small garlic cloves
  • 1 onion(s)
  • 100 ml plant milk (plant drink), e.g. almond drink
  • 2 tbsp soy sauce
  • 1 tsp, heaped peanut butter or peanut butter
  • 1 tsp, leveled ginger powder
  • curry powder
  • Caraway seeds
  • Sea salt and pepper
  • 1 liter vegetable broth
  • 500 g pasta
  • 1 tbsp oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Peel and finely chop the onion and garlic. Wash and slice the pak choi. Peel and thinly slice the carrots. Sauté the onions and garlic in oil and soy sauce in a large pot. Add the chopped vegetables and sauté lightly. Meanwhile, chop the tomatoes as finely as possible (I used a hand chopper to retain the juices and make it very fine). Add the tomatoes to the vegetable stock and mix with the peanut butter or peanut butter. Add the noodles and the remaining seasonings to the vegetables and fold in. Then add the vegetable stock. Make sure all the noodles are covered. After about 5 minutes, add the milk and simmer until the noodles are tender. Season to taste and serve. Approx. 370 kcal per serving.
