One-Pot Pasta with Vegetables and Peanut Sauce

Ingredients for 4 servings:

  • 400g linguine
  • 1 liter vegetable broth
  • 3 garlic cloves
  • 5 cm ginger root
  • 2 carrots
  • 1 bell pepper(s), red
  • 4 spring onions
  • 125 g peanuts, roasted
  • 2 tbsp peanut butter
  • ½ tsp chili flakes
  • 1 tbsp soy sauce
  • 2 limes, juice
  • 3 stalks of coriander
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes

Chop the vegetables and juice the limes. In a sufficiently large pot, bring the vegetable broth with the ginger, garlic, and carrots to a boil. When the broth boils, add the noodles, peanut butter, lime juice, cilantro, and soy sauce and continue to cook over medium heat. After 5 minutes, add the bell peppers and continue simmering until the pasta is tender. Add a little water if necessary. Shortly before the end of the cooking time, add the peanuts and spring onions to the pot and season to taste.
