Pepper – onion – tomato pan with rice

Ingredients for 2 servings:

  • 2 bell peppers, red or yellow
  • 1 onion(s)
  • 1 tomato(s)
  • some tomato paste
  • 1 cup rice
  • Salt and pepper, black
  • some margarine
  • possibly cayenne pepper
  • vegetable broth
  • n. B. water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Chop the peppers, onions, and tomatoes into pieces. Precook the peppers (not too soft) and then fry them with the chopped onions in a little margarine. Add the tomatoes only when the peppers and onions are almost cooked. Add salt and black pepper, or cayenne pepper if desired. Finally, add a little water to the vegetables and season with broth and tomato paste. Serve with rice, which tastes particularly good when cooked in broth. Of course, you can also use noodles instead of rice. A simple but delicious dish!
