Vegetarian fried potato pan

Ingredients for 3 servings:

  • 600 g potatoes, waxy
  • 1 bell pepper(s), red
  • 1 zucchini
  • 1 onion(s)
  • 1 tsp thyme
  • 1 tsp paprika powder
  • salt and pepper
  • olive oil

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Boil the potatoes in salted water for about 25 minutes, then peel them. Ideally, do this the day before. Slice the potatoes, not too thinly. Cut the peppers and zucchini into bite-sized pieces. Slice the onion into strips. Heat the oil and fry the potato slices very slowly over medium heat, turning occasionally, for about 15 minutes until browned and crispy. Then season with salt and pepper, remove from the pan and drain on kitchen paper. Add another splash of oil to the pan and add all the vegetables. Cook over medium-high heat, turning occasionally, for about 6 minutes, until the vegetables have the desired bite. Season the vegetables with the paprika, thyme and salt & pepper, return the potatoes to the pan and turn everything over medium heat again.
