Curry noodle salad with mandarins, peppers and peas

Ingredients for 4 servings:

  • 500 g spiral noodles
  • 1 bell pepper(s), red
  • 125 g peas, frozen
  • 1 class can/n mandarin(s), 175 g drained weight
  • 250 ml curry sauce
  • 4 tbsp Miracle Whip Balance
  • salt and pepper
  • curry powder

quick and easy

Cook the spiral noodles in salted water until al dente, place in a sieve, rinse with cold water and let drain. Place the mandarin oranges in a sieve and collect the mandarin orange juice in a bowl. Deseed and wash the bell peppers and cut into small cubes. Briefly place the peas in boiling water until cooked through but still firm to the bite. Then refresh with cold water and let drain. In a large bowl, mix the spiral noodles with the diced bell peppers and peas. For the salad dressing, mix the curry sauce, Miracle Whip Balance and the mandarin orange juice in another bowl. Gradually add the salad dressing to the pasta and mix everything well. Season with salt, pepper and curry powder to taste. Finally, carefully stir the mandarin oranges into the pasta salad and let it marinate for at least two hours. Tip: Optionally, you can also add diced cooked ham or roasted chicken breast to the pasta salad.
