Ingredients for 4 servings:

  • 100 g powder (seitan powder)
  • 100 g puffed rice
  • 5 tbsp breadcrumbs
  • 1 serving of egg substitute (No Egg – mixed according to instructions)
  • 1 tsp cornstarch
  • 200 ml water
  • 2 ice cubes
  • 30 ml rapeseed oil
  • 30 g fried onions
  • 1 g mushrooms, dried
  • 1 tsp mustard seeds
  • 1 tsp mustard, medium hot
  • ½ tsp cumin
  • 2 tsp sweet paprika powder
  • ½ tsp smoked salt
  • 1 tsp sea salt
  • ½ tbsp pepper (Timut pepper), ground
  • ½ tbsp pepper, green, ground
  • 2 juniper berries
  • 2 tomatoes, dried in oil
  • 3 tbsp tomato paste
  • 2 tsp peanut butter
  • 2 tsp Worcestershire sauce, vegan
  • 1 tsp rice syrup
  • 1 garlic clove(s)
  • 30 ml beetroot juice
  • 15 pretzel sticks
  • 6 pineapple slices

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

In a mixing bowl, thoroughly crumble the rice cakes (approx. 5 mm). Add the seitan, egg substitute, and cornstarch. Combine all other ingredients, except the onions, in a separate bowl and puree. Finely chop the onions and add them. Mix everything together for a while with a dough hook. Shape the ground meat substitute into a hedgehog. Insert pretzel sticks as spikes and garnish with pineapple. If the hedgehog is too scary for you, you can also form small meatballs from the mixture or use the seitan-ground meat for Mettbrötchen (meat rolls).
