Ingredients for 1 servings:
- 190 g flour
- 50 g oat flakes
- ½ tsp baking soda
- ½ tsp baking powder
- 1 pinch of salt
- 1 serving egg substitute, e.g. 1 tbsp soy flour, 3 tbsp liquid
- 140 g margarine
- 100 g brown sugar
- 100 g white sugar
- 1 tbsp lemon juice
- 200 g chocolate, dark, chopped or as drops
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes
Preheat oven to 175°C. Mix flour, oats, baking soda, baking powder, and salt in a large bowl. Using a hand mixer, beat the shortening, both sugars, egg substitute, and lemon juice in another bowl until fluffy. Mix both components together. Be careful not to overcook! Just until everything is combined. Finally, add the chocolate chips. Use an ice cream scoop (or a spoon) to scoop out even portions and shape into balls. Place on a baking sheet (I recommend no more than 5 cookies per sheet). After 5 minutes in the oven, flatten the balls slightly. The heel of my hand worked well for me. Bake for about 10-15 minutes, until the edges are lightly browned. The exact baking time depends on whether you want your cookies soft in the middle or crispy.
