Kale salad à la Waldorf

Ingredients for 2 servings:

  • 150 g kale, frozen, leaves or better chopped
  • 100 g celery
  • 1 large carrot(s)
  • 1 handful of walnuts with cranberries, mixed
  • salt and pepper
  • 2 tbsp sour cream

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Thaw the kale and strain the liquid. Finely grate the carrot and celery and combine. Season generously with salt and pepper. Chop the walnut mix and mix in. Finally, toss everything with the sour cream. This salad tastes great as a side dish to schnitzel, chops, or similar dishes. It also makes an excellent filling for quark and herb crêpes.
