Lamb's lettuce with pine nuts and mayonnaise

Ingredients for 2 servings:

  • 150 g lamb’s lettuce
  • 25 g pine nuts
  • ½ onion(s)
  • 3 g sugar
  • 2 g salt
  • 1 tbsp sunflower oil
  • 3 dashes of balsamic vinegar
  • ½ tbsp raspberry vinegar
  • 1 tbsp, heaped mayonnaise

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 3 minutes; Total time approx. 13 minutes

Wash the lamb’s lettuce and drain well. Place the lettuce in a large bowl. Finely dice the onion and place it in a small bowl. Mix the dressing in this bowl. Roast the pine nuts in a small pan without adding any fat until golden brown, then set aside. For the dressing, mix the onions, sugar, and salt in the small bowl and let it stand for about 5 minutes. Add the sunflower oil, balsamic vinegar, raspberry vinegar, and mayonnaise and mix everything together until smooth. Add the pine nuts to the salad and carefully fold the dressing into the salad.
